Surprise the children and the rest of the family too with tostadas, a twist on the traditional taco. Serve this colourful and nutritious blend of cabbage and green peppers and they will come back for more.
Toasty Tostadas
250 ml (1 cup) each shredded green and red cabbage
250 ml (1 cup) thinly sliced green peppers
250 ml (1 cup) corn kernels
125 ml (1/2 cup) light mayonnaise
15 ml (1 tbsp) granulated sugar
2 ml (1/2 tsp) each salt and pepper
500 ml (2 cups) shredded cooked chicken
Garnishes: shredded Monterey Jack, thinly sliced green onions, tomatoes, coriander sprigs
In a bowl, toss red and green cabbage, green peppers, corn, mayonnaise, sugar, salt and pepper until combined.
Warm tostadas in a 180 C (350 F) oven until warmed through, about 2 minutes.
Top each tostada with chicken, cabbage mixture, cheese, green onions, tomatoes and coriander.
Makes 4 servings.
