Serving something fancy needn’t take a lot of work. Presentation also counts for a lot of the impression people have of their food.
A fancy dessert made of rice pudding? Serve this one in clear coffee cups, and garnish — and you’ve got a lovely dessert from a simple comfort food.
This simple-to-make pudding can also be prepared ahead of time.
If chilled, stir and reheat pudding in microwave-safe bowl for two to three minutes or until warm. Then garnish and serve.
Cappuccino Rice Pudding Cups
750 ml (3 cups) cooked medium- or long-grain white rice
500 ml (2 cups) whole or 2 per cent milk
425 ml (1 3/4 cup) sweetened condensed milk
15 ml (1 tbsp) instant coffee granules
Garnish
Sweetened whipped cream
Ground cinnamon
Chocolate shavings
In a large saucepan over medium-high heat, combine rice, milk and condensed milk, bringing just to a boil. Reduce heat to medium; cook for 20 minutes, stirring frequently or until thickened.
Remove from heat, stir in instant coffee granules until dissolved. Let cool slightly.
Spoon equal amounts of warm rice pudding into 8 small coffee cups.
Garnish with whipped cream and sprinkle with cinnamon and with chocolate shavings, if desired.
Makes 8 servings.
