Kids love pizza and this recipe is lower in fat and healthier as it’s made with ground turkey on whole-wheat pitas.
Pesto Pizzas
60 ml (4 tbsp) olive oil divided
125 ml (1/2 cup) red onions, thinly sliced
1 clove garlic, minced
500 g (1 lb) ground turkey
6 whole-wheat pitas
15 ml (1 tbsp) coarse salt
15 ml (1 tbsp) dried oregano
90 ml (6 tbsp) pesto
50 ml (1/4 cup) pine nuts, toasted
250 ml (1 cup) Asiago cheese
Preheat oven to 200 C (400 F).
In a large skillet on medium-high, heat 30 ml (2 tbsp) of the oil. Add onions and saute for 5 minutes. Add garlic and saute for 2 minutes more.
Add ground turkey and saute until completely cooked and starting to brown, about 10 minutes. Remove from heat and set aside.
Brush each pita with remaining olive oil. Season each pita with salt and oregano. Spread each pita with 15 ml (1 tbsp) of the pesto. Divide turkey mixture evenly among the 6 pitas. Repeat with pine nuts and cheese.
Transfer pizzas to a baking sheet and bake for 10 minutes or until cheese is melted and golden.
