Most people think of tuna as a rather mild-flavoured comfort food. But you can spice it up, too.

For a light but delectable lunch, serve this flaked tuna dish with spicy Thai chili. Serve over cooked rice noodles, basmati rice or toast.

Spicy Curry Ginger Tuna

2 cans (each 85 g) flaked light tuna (spicy Thai chili flavour)

5 ml (1 tsp) pureed packaged ginger

45 ml (3 tbsp) finely chopped green onion, divided

1 ml (1/4 tsp) curry powder

30 ml (2 tbsp) mayonnaise

In a bowl, mix tuna, ginger, chopped onion (reserve some for garnish), curry powder and mayonnaise.

Serve over cooked rice noodles, basmati rice or toast. Garnish with reserved chopped green onion before serving.

Makes 2 servings.
