The 6858 Gaetz Ave. business, which is scheduled to open to the public on Monday, will be the 123rd Cora in Canada, with Jamie and Lana Hoover the local franchisees. The chain was founded by Cora Tsouflidou in 1987, after she bought a defunct snack bar in Montreal and turned it into a popular breakfast spot. Crepes, omelettes, french toast and waffles are among Cora’s specialties.
