Soon after implementing a new food menu for small hospitals and long-term care facilities, Alberta Health Services took the critical step of talking to residents and patients to seek feedback.

We commissioned an external review to learn what was working, and what changes we needed to make. We listened to our patients then, and we continue to listen now as we evolve the menus at our facilities.

What our residents and patients tell us is they want more meat and potatoes, more soup and sandwich options, more local favorites and seasonal menus based on local preference. Today, patients are offered these additional choices, and at least seven servings of fresh fruits and vegetables per day, and for those with a sweet tooth, a wider choice of dessert options.

The recommendations of the external review verified that patient and family input was essential. This is why AHS conducts patient food services satisfaction surveys every six months. According to the latest survey results completed in March 2012, the overall satisfaction of patients and residents is greater than 90 per cent.

The provincial core menu program provides choice and flexibility while ensuring special dietary requirements are met. And, we can reassure Albertans that the nutritional value is sound and aligns with our provincial diet guidelines. It supports the AHS Healthy Eating Environments Policy, which sets the direction for ensuring healthy food and beverage options are available in all AHS facilities.

We would never compromise on nutrition — but we will continue to talk to the people who matter. Along with conducting surveys, AHS has held a number of food-tasting sessions with patients, residents, family members, community members and staff across the province over the past two years. Also, AHS now has a culinary lead who travels to sites across the province to assist our cooks and food service staff in customizing meal preparation for their residents and patients.

The new provincial core menu program has been an important step in ensuring AHS provides consistent, quality and standard food services to each and every Albertan, regardless of where they live and where we provide care.

Sandwiches, salads, soups and roast meats are made from scratch. Some main dishes, such as casseroles, are reheated, garnished and portioned onto china plates – not unlike when Albertans serve their families a store-bought lasagna. Wherever possible, sites are able to purchase food such as eggs, potatoes, and bread from local vendors, as well as purchase low volume items from local grocery stores.

We will continue to engage and consult directly with patient and residents, their families and staff to ensure the food served and food choices offered meet their wants and needs.
